The dairy of Irleau (Lapwing)
Excerpt from monographs dairy cooperatives Deux Sevres
The dairy cooperative Irleau which dates back to February 23, 1890, is located at place called "the stubble Irleau", 300 meters the village of Irleau and 5 km from the railway station of St George Rex, on the line to Épannes Marans.
She had in 1895, 437 members and 500 in 1889.
buildings, specially constructed, consist of
1 the plant itself;
2 ° two barns placed perpendicular to the dairy and from north to south;
3 dwelling houses for the swineherd;
4 ° a hangar.
The material includes a machine horizontal force of 10 horses, 5 skimmers (4 centrifugal Laval, a rate of 300 to 400 liters per hour, and an Alfa A 2 a flow of 800 to 1000 liters per hour), a churn Hatter and rotary mixers.
The purchase price of these instruments was of 3,800 francs (milk, butter churns, mixers).
Skimming is a daily ½ hour after sunrise, the cream is stored in both summer and winter for a day in the interior of the plant.
Churning occurs between 5 am and 3 o'clock in the afternoon, after the season. The butter is then packed in wicker baskets, paper, straw or straw and shipped with great speed to Paris, where it is sold at central markets through agents.

Most cows belong to race Maraîchine and various crosses, and their diet consists of hay meadows natural, regrowth forage of artificial grasslands developed on alluvial deposits.

Employees receive the following treatment: The Accountant and the butter dish 1000 francs each, the driver 900 francs; the skimmer 1 franc, 70 per day.

of Irleau since 1894 has significantly improved its equipment. Two churns Simon, 600 liters each, were purchased in 1897 and 1899, and added heaters and condenser, a refrigerating machine in 1900.
